This white Christmas rocky road is a rich treat for Christmas celebrations!


Ingredients (makes 20 squares)

  • 540g White chocolate melted
  • 3 Tbsp Vegetable oil
  • 3/4 cup (105g) Pistachios, chopped
  • 50g Mini Marshmallows
  • 1/2 cup (100g) Red glace cherries, halved
  • 1/4 cup (20g) Desiccated coconut

Method

  1. Grease a 31x26cm shallow tray. Line base and sides with baking paper, allowing a 2cm overhand at both long ends.
  2. In a medium bowl combine white chocolate and oil. Add the pistachios, marshmallows, cherries, and coconut. Stir until well combined.
  3. Press mixture into prepared pan. Refrigerate for 3 hours or until firm.

Notes

You could cut these in shapes if you have cookie cutters, ie stars are nice for Christmas!

  • I am making a version of this for Christmas. But I am making it fudge. Add sweet condensed milk, swap out the glacĂ© cherries and pistachios for raspberry lollies and almonds. I will probably omit the coconut too.

  • I made something like this in a healthier version with organic pure raw cacao butter, pistache, descinated coconut, goji berries, pumpkin seeds, raw vanilla powder and a wee bit yacon syrup. Used a star shaped ice cube tray as mold: nice presenting for Christmas.


    • Next time I’m gonna do it with lightly toasted buckwheat kernels instead of descinated coconut, will make it nice and crunchy :)
