This white Christmas rocky road is a rich treat for Christmas celebrations!

Ingredients (makes 20 squares)

  • 540g White chocolate melted
  • 3 Tbsp Vegetable oil
  • 3/4 cup (105g) Pistachios, chopped
  • 50g Mini Marshmallows
  • 1/2 cup (100g) Red glace cherries, halved
  • 1/4 cup (20g) Desiccated coconut

  1. Grease a 31x26cm shallow tray. Line base and sides with baking paper, allowing a 2cm overhand at both long ends.
  2. In a medium bowl combine white chocolate and oil. Add the pistachios, marshmallows, cherries, and coconut. Stir until well combined.
  3. Press mixture into prepared pan. Refrigerate for 3 hours or until firm.

Notes... You could cut these in shapes if you have cookie cutters, ie stars are nice for Christmas!

  • Such a tasty variation to the original rocky road. Yum

  • I love rocky road

  • I am making a version of this for Christmas. But I am making it fudge. Add sweet condensed milk, swap out the glacĂ© cherries and pistachios for raspberry lollies and almonds. I will probably omit the coconut too.

  • Yummy

  • Love the white chocolate!
Reminds me of the white Christmases they get overseas.

  • Looks good. Think I might try with dark chocolate mmmm

  • This is sure to go down well with the kids. (-:

  • I like to use ricebubbles in these kind of things instead of nuts for kids

  • My sister gave me homemade rocky road this year, it was delish. I will have to try this to give as gifts
