Even if you’re a self-proclaimed carnivore, you’re going to be positively salivating at the sight of the viral Whole Roasted Cauliflower recipe that’s taken the internet by storm.

And the beauty of it is that it can be as simple or as involved as you like. You can experiment with ingredients and flavours, but it’s the actual roasting of the cauliflower that makes it so delicious.

The below recipe is from Erin O’Brien, and is super easy with just a handful of ingredients.

Desert Island Dishes also created a version of Whole Roasted Cauliflower that’s drizzled with tahini and topped with a chimichurri-style sauce. YUM!

Ingredients

  • 1 whole cauliflower
  • 1/2 cup extra virgin olive oil
  • 2 tbsp melted butter
  • 1 lemon, zested
  • 3 cloves garlic
  • salt & pepper
  • parmasen cheese

Method

  1. Mix together oil, melted butter, zest of one lemon, grated garlic cloves and salt and pepper.
  2. Pour over a whole cauliflower.
  3. Roast in the oven with the lid on, then once cooked through, sprinkle with parmesan cheese and return to oven without the lid to brown.
  4. Drizzle with a squeeze of lemon juice and top with a herb of your choice.
