It sounds healthy, it is healthy..but they taste yum!


Ingredients

  • 1 1/2 cups Wholemeal self raising flour
  • 1 1/2 cups milk
  • 1 egg
  • 2 tea spoon vanilla extract
  • 1/4 tea spoon Bi carb soda
  • 1/3 cup caster sugar
  • 25g butter
  • 1/2 cup freshly ground flaxseed

Method

  1. Whisk milk, egg and vanilla together in a bowl
  2. Sift in dry ingredients and stir in sugar and flax seed, whisk all together until small bubbles appear
  3. In a hot pan melt butter and and cook pikelets until golden brown on both sides
  4. Remove from heat and serve immediately with fresh jam or honey or set aside to cool, refrigerate and add to lunchboxes with a little honey 'sandwiched' between two pikelets

Notes

These are sweet little nutty flavoured pikelets that the kids enjoy, Its nice to have snacks on hand that are both tasty and nutritious. These will keep in the fridge for about three days!

  • I’ve made pikelets a few times, from a recipe that my Nanna always used. I’ve never thought to put flaxseed in them though. Certainly something to try next time I make them.


    • Pikelets is such a good starter recipe to be handed down from older relatives.
