The internet has developed a healthy obsession with this two ingredient cottage cheese flatbread, and it’s not hard to see why.

It’s an easy peasy gluten-free, high protein, low calorie bread alternative, and you probably already have the ingredients in your fridge.

Cottage cheese flatbread is being hailed as guilt-free bread, packing 25 grams of protein per serving. And it can be jazzed up with whatever herbs and spices you and your family love.

All you need to create this wonderous delight is:

Cottage Cheese Flatbread Recipe

  • 1 cup of cottage cheese
  • 2 eggs

That’s it! Just add both to a food processor and whizz it up. You can add any herbs you like at this point (garlic and onion powder are great, as well as Italian seasoning).

Once blended, pour the mixture onto a small baking pan that’s been lined with baking paper. Pop it in the oven at 180°C for 40 minutes and that’s it. You can use it as dipping bread, as a wrap for a sandwich with your favourite fillings. Amazing.

Food blogger Mac shared a video on how to make the flatbread, and she says while initially the thought of it ‘grossed her out’ once she tried it she says it blew her mind!

  • This would be awesome if you are on a strict budget.
    It looks awesome and is something I will have to try. I dont have a bullet of processor so will give it a go with my standard cake mixer which should be ok. Great for nights with soup or curry

  • I tried this and came back to say how delicious it was. We used it as naan bread with a mild tikka massala. I made 2 sheet pans and threw chilli in mine and my husbands breads and garlic and coriander in all of the (mainly for that delicious smell while cooking)

  • This is not a bread I have come across before or even considered making. Looks interesting but doubt it is something I would consider making as my daughter has an allergy to eggs. Great for those who want to be adventurous and make something different for the family, I am sure it would be tasty.

  • I’ve never heard of this bread, but it sounds intriguing. I always wonder how people come up with these recipes using so few ingredients.
    It looks a bit like an omelette. I’m keen to give it a go for my work lunches. The kids would probably enjoy it too, especially with a tasty filling.

  • Hmmm not sure if this would be more egg/omelet flavoured than a bread flavour would be High in Protein though and would be good for my gym going nephew who lived with us

  • Healthy ingredients, but 40 minute cooking time is a lot of energy. I would make it if I was cooking something else in the oven at the same time.

  • Similar to the Greek yoghurt 2 ingredient flat bread, only this one is gluten free. I’m picturing more omelette flavours then bread tho
