  • Corn Fritters are quick and easy, tasty and filling. You can make these and warm up the next morning serve with sour cream or Mashed Avocado. Mini quiche is fast and easy make the egg mixture add ham or Bacon, or veggies, or grated zucchini and red onion. Cooks in 10 minutes in greased muffin tin. Also great morning tea for the kids. Zucchini Slice is fast and easy to make.


  • Porridge is great, banana pike lets, soft boiled eggs with toast soldiers, avocado on toast. My favourite at the moment is eggs fried in capsicum rings, with mushrooms and cherry tomatoes

  • I love making pancakes, my latest is two ingredient pancakes, mash a banana and whisk two eggs through it. Spoon the mixture into a hot frypan (use a little butter if the pan is not non stick), wait until the mixture starts to look cooked on the outside of the top but still a bit gooey in the middle, flip them slowly (fast flipping does not work with these as they are not traditional pancakes) and cook on the other side. To make them fluffier include 1/4 teaspoon of baking powder in the mixture.

    My 9 year old daughter and 1 year old loved them, I even pop them in zip lock bags when cooler and my daughter can take them to school.


  • I actually can not go past a simple bowl of oats. Especially in these cooler months. So easy to prepare and can jazz it up with whatever I feel like that morning.


  • We have eggs a lot in my family but I always try to mix it up, so one time boiled, next time scrambled, next time sunny side up and then even a frittata, omelette or french toast (I don’t do anything fancy, just eggs and milk whisked together and I dip in the stale bread and cook in a non stick frypan). I always serve our eggs with greek style yoghurt topped with a little salt and olive oil, its delicious.

    I also like to make my kids muesli cups. I layer Greek yoghurt, honey, berries then muesli into cups and they absolutely love it!


  • We have scrambled eggs a lot. Chuck in some ham and cheese, or some chopped spinach or mushrooms with a few whisked eggs and a bit of milk. They only take a few
    Minutes to cook and everyone, including bubs can enjoy them. I find they are great as bubs can hold the bigger chunk of egg and feed themselves.
