Hello!

We’re hosting Christmas day this year YAY! Finally my turn to serve what I want! I’m looking for some quick, easy and fresh lunch ideas. Would really love healthy options this year and hubby and I will be trying to conceive after Christmas. I realise its only one day but I really don’t want that heavy feeling in my stomach at the end of the day again haha We will be having fresh fruit, salad, ham and prawns but stuck on some more ideas. Got some big boys to feed! Any help would me greatly appreciated! Thanks :)

  • Also lady bug bread slices with smoked salmon and cream cheese. They look really cute – google them

  • Baked salmon – decorate using leak leaves, egg and black olives to make a nice picture. Looks quite effective. It’s a recipe from a tassal cookbook

  • Did you end up with any good recipes? Would be interested to know for next Xmas!

  • hope that you enjoyed your day and good luck ;)

  • Chicken & beef skewers, cold noodle salad, cob loaf is always a hit. Not as healthy but great still

  • For the big boys they need feeding so carbs will fill them up. bread, potatoes, pasta either hot or used in salads is filling and tasty.

  • Have you tried looking at the fresh food magazine that is free at Woolies and Coles ? Many times their recipes are very easy to make and best of all you shop at the same store to buy the ingredients. What about bbq kebabs ? I remembered even making them at school in my young days and it was a skewer with meat pieces, pineapple, capsicum ( red and green ) etc and then pan fry or grill them . I think what you are doing is the easiest thing to organise especially during this busy period. Good luck and hope and it goes well.

  • Thanks ladies! Potato salad is a great idea!!

  • Lasagna is always a winner and is filling.

  • MOM165081 – has a terrific idea! Potato salad is definitely good for filling up everyone’s stomachs.

  • We make a potato salad with a little fresh mint and bacon and homemade dressing. It fills up big boys!

  • Sounds like a pretty good feast to me! Fancy bread rolls will fill up hungry tummies.

  • Maybe some nice toasted sourdough bread with goat cheese and roasted peppers?
A pasta salad with pesto, mozzarella and cherry tomatoes. (You can eat it cold too)
Cold rice salads, or quinoa salads.
