Btw I’m dutch myself. I’ve a dutch pancake pan which goes on the gas plate and an electrical one. I prefer the dutch pancake pan that goes on the gas / induction plate

I would just try it out. When it’s an electrical one I would plug it in to heat. For batter you can use any pancake batter. I often use the most simple pancake batter which is self raising wholemeal flour, egg, pinch of salt, some raw vanilla powder, baking powder and water. Mix the batter together and fill the hole with a spoon of batter, do not overfill
