I also could never remember the float or sink thing. I think I’d just crack them into a little bowl – one at a time – and give each the sniff test before I used them.

Floating eggs have air or gas in them which are no good. Fresh eggs will sink.

Farm fresh eggs will last longer … just pop them in some water if they float they are bad

I’ve always done the water test

Fill a pot with water and if it sinks it’s fresh, if it floats it’s off. They float because as they start going bad they get a build up of gas inside which makes them float
