Pending which type of ‘vegetarian’ diet she is on, lets hope she still eats eggs, fish and dairy, but in a nutshell, what ever she eats at night, give her for school. In the sandwich dept, cucumber, jam, banana, apple, in fact anything she likes between 2 slices of bread.
