A quick and easy dessert that my kids love.


Ingredients (serves 4)

  • 1 banana (mashed)
  • 2 eggs
  • 2.5 cups milk
  • 1/2 tablespoon vanilla
  • 1/4 cup cornflour
  • 1/4 cup sugar (or less if you want it less sweet)

Method

  1. In a bowl, mash the banana with a fork and set aside.
  2. In a pan, whisk the eggs, milk, vanilla and cornflour together and place over medium heat. Bring to a boil, whisking continuously. Once at a boil, reduce heat and simmer for 2 minutes. Then whisk in the sugar and remove from heat.
  3. Place the banana in the custard pan and mix through to combine. If you want it smooth, you can blitz it (carefully as it will be hot). Serve

Notes

You can top with a sprinkle of cinnamon but I tend to serve with a scoop of LSA (linseed, sunflower seeds and almonds ground down).

  • i would have loved to have made this for my kids when they were younger. i was too scared to try making my own baby food when i had my first child. lol

  • Made this but cooled it down first before adding banana. Also tried pear done this way as other toddler can not eat bananas, great in that the flavour is done after the custard is made so I could this.

  • I suppose you could stew some apples or pears too and add them for a different flavour.
