Ingredients (serves 4)

  • 4 thick pork cutlets or steak
  • 50g (1/2 cup) crumbled blue cheese
  • 2 teaspoons butter
  • 1 ripe pear, sliced

Method

  1. Cut horizontal slit through the thickest portion of each pork chop to form a pocket. Stuff 2 tbsp. crumbled blued cheese into each. Season both sides with sea salt and cracked pepper.
  2. In a large non-stick frying pan, cook the pork for 3-4 minutes each side, or until cooked through but still juicy. Remove the pork from the pan, cover with foil and rest for 5 minutes.
  3. Add the butter to the pan, swirl to melt and coat the base. Add the pear, season and cook, turning occasionally, until lightly browned, about 4 minutes.
  4. Serve the pork with the pear

  • This was an explosive recipe to make.

    Had a little bit of difficulty stuffing the pork with blue cheese, mainly because I could only find a very smooth/creamy cheese instead of a crumbly one. I may have been a little bit enthusiastic with the quantity of cheese in each pork chop (the closest cut I could find).
    Not long after placing the chops in the pan, they exploded a bit and blue cheese oozed everywhere in the pan.
    Not to worry. After cooking the pork I had a pan full of blue cheese and pork juices for the pears and asparagus. I pretended that everything was on purpose and carried on.

    The taste was really good. Blue cheese complimented the pork really well. The pears had a blue cheese taste to them and it worked well. No flavour overpowered another which was a big surprise for me as I thought the blue cheese would take over.

    I would presume that replacing the pears with apples would work just as well.

  • I know my hubby and son won’t do the blue cheese thing. I just know it. My son already has sensory issues and dislikes many foods as a result. However, I’m always looking for new dinner ideas and whilst the family isn’t a huge fan of pork I want to persist. We all find it bland. But, this recipe sounds so yum. Maybe I just need to replace the blue cheese with something else.
