The world is divided into those who like brussel sprouts and those that don’t. You may not be a fan of a cooked brussel sprout but if you love a crunchy salad give this a try. Not only is it good for you, it tastes fantastic.

Ingredients:

  • 6 Brussel sprouts
  • 1 Zucchini
  • 1/2 a bunch of chopped mint
  • Pinch of sea salt
  • 1/4 cup Pecorino, grated
  • 3 Tbsp of good olive oil

Method:

  1. Finely sliced brussel sprouts.
  2. Slice zucchini using a vegetable peeler.
  3. Add mint.
  4. Add a good pinch of sea salt and pecorino.
  5. Top with about 3 Tbsp of good olive oil.
  6. Mix and spread out on a plate.

  • As much as I would like to think I love all salads, I don’t think I could do brussel sprouts.
    Maybe if it had some other flavours in there too.

  • Actually used to tell my daughter brussel sprouts are baby cabbage patch veggies to get her to eat them. Will have to try this recipe before I make a comment.
