This recipe is wonderful for a quick ,healthy lunchbox treat for school, work or just a snack.


Ingredients (makes 14 )

  • 1/8 cup chia Seeds
  • 1/2 cup rolled oats
  • 2 cups wholemeal flour
  • 3 tspns baking powder
  • 1/2 cup brown sugar
  • 1/4 cup olive oil
  • 2 eggs
  • 1 3/4 cups Greek Yoghourt
  • 1 cup frozen blueberries

Method

  1. Preheat oven to 180 degrees.
  2. Place dry ingredients in a bowl.
  3. Whisk the oil, eggs and Greek Yoghourt together.
  4. Add the wet ingredients to the dry ingredients and stir to combine.
  5. Fold in the blueberries, then place mixture into 12-14 paper cups.
  6. Bake in the oven for 30-35 minutes.

Notes

Some ingredients can be replaced to suit the individual. These include gluten free flour, caster sugar, quinoa flour or almond meal can be used. Be creative and experiment with foods you enjoy.

  • Nice recipe ! I would use coconut palm sugar instead of brown sugar, coconut yoghurt to make it diary free and buckwheat flour or chickpea flour to make it gluten free
