Quick easy Mild Curry


Ingredients (serves 6)

  • 1kg Chicken Thighs
  • 440g can Mango Sices
  • 2 tpsn Keans Curry Powder
  • 2 cloves Garlic
  • 1 tblsp wholegrain mustard
  • 1/2 cup Chicken stock
  • 2 carrots - thinly sliced
  • 100gm Snow Pea's
  • 6 Shallots - sliced
  • 1/3 cup Sour Cream

Method

  1. In a large frypan or wok on maximum heat,Saute garlic and Onion until just soft
  2. Add chicken strips and fry until brown on all sides. Turn pan down to low and add carrots, curry powder, mustard and stock. Simmer for 5 mins.
  3. Add green stalks of spring onions, snow peas and sour cream. Season with salt and pepper. Just before serving, gently fold through thinly sliced mango cheeks. Serve with rice.

  • Oooh definitely adding this one to my list of “must makes” I love chicken curry and I love mango so im super keen to see how these taste together. It also looks fairly quick and easy to make which is always a bonus plus it’s a rice dish which usually goes down well in our house.

  • This is one of those recipes that I don’t think I’d like personally, but others in the family probably will. So I like that it’s easy, because if I’m going to make multiple dishes, I really don’t want one of them to be terribly difficult or time consuming. Thank you for the recipe.

  • A divine looking curry with good colour and the flavours sound delicious. Love a good curry at every time of the year, but particularly with the cooler weather upon us – it is so good for warming the body and filling the tummy. :)
