Quick easy Mild Curry
Ingredients (serves 6)
- 1kg Chicken Thighs
- 440g can Mango Sices
- 2 tpsn Keans Curry Powder
- 2 cloves Garlic
- 1 tblsp wholegrain mustard
- 1/2 cup Chicken stock
- 2 carrots - thinly sliced
- 100gm Snow Pea's
- 6 Shallots - sliced
- 1/3 cup Sour Cream
Method
- In a large frypan or wok on maximum heat,Saute garlic and Onion until just soft
- Add chicken strips and fry until brown on all sides. Turn pan down to low and add carrots, curry powder, mustard and stock. Simmer for 5 mins.
- Add green stalks of spring onions, snow peas and sour cream. Season with salt and pepper. Just before serving, gently fold through thinly sliced mango cheeks. Serve with rice.
