Really nice cold and shredded into a green salad. You can also grill instead of frying – just mix the oregano and lemon zest in a little bit of oil, and rub well into the chicken before grilling.
Ingredients (serves 4)
- 1 tablespoon olive oil
- 4 chicken breast fillets
- 1 tablespoon lemon zest
- 2 tablespoons oregano leaves
- Salt and pepper
- Juice of one lemon
Method
- Cook chicken fillets in olive oil for a minute each side or until golden brown.
- heat and add oregano and lemon zest. Cover and cook for 5-8 minutes or until cooked through.
- Remove from pan and sprinkle with salt and pepper. Slice thickly and serve drizzled with lemon juice with steamed greens.
