Ingredients (serves 2 | makes 2 )

  • 1/2 avocado, diced
  • 1 tbsp lime juice
  • 6 cherry tomatoes, quartered
  • 1 tbsp finely chopped coriander
  • 2 Tip Top Thins in Wholemeal
  • 80g spreadable cream cheese
  • 2 tsp dukkah
  • 75g cooked salmon

Method

  1. Put the diced avocado, lime juice, tomatoes and coriander into a bowl. Season with sea salt and freshly ground black pepper and stir to combine.
  2. Spread the cream cheese over two slices of Tip Top Thins. Sprinkle with the dukkah and spoon over avocado mixture.
  3. Top with flaked salmon and enjoy!

  • I really do love to buy these Tip Top Thins and it appears others do too as they are hard to find in store when I go shopping; I buy extra when I can get them. I do love to eat salmon and it is so delicious to eat when served on these tasty Thins.

  • I haven’t tried these thins as yet, maybe it’s the time too as these look delicious . There would be lunch envy at my workplace and i will have to make it for everyone.. Some people do not like Coriander so i will need to leave it out for them.

  • No Salmon for me (as I’m a vegetarian, but avocado, dukkah and chopped tomato (especially truss tomato) are a favourite of me. I’m not as much a bread eater myself, but used to buy thins for my kids on a weekly basis. Recently not anymore as they don’t come in gluten free and we like more seeded breads

  • just love the salmon one. I will try it with smoked salmon and a few capers. Bliss! I can pretend that because I am not using bread, it is healthier and smooth my conscience. All the ingredients are healthy and full of flavour. Just the thing for a quick lunch.

  • This dish looks so tasty and absolutely full of flavour and wow factor. The only thing I would remove and this is just a personal choice is the dukkah as this is something I don’t really like. You can add as much or as little avocado as you like as well as the cheese and salmon and it could end up being a yummy meal.
