This open salmon sandwich is easy to make and tasty too.

Try this light but flavoursome open salmon sandwich for lunch this summer, it’s a tasty meal that’s sure to be a crowd pleaser with any of your guests.

Ingredients (serves 2 | makes 2 )

  • 1/2 avocado, diced
  • 1 tbsp lime juice
  • 6 cherry tomatoes, quartered
  • 1 tbsp finely chopped coriander
  • 2 Tip Top Thins in Wholemeal
  • 80g spreadable cream cheese
  • 2 tsp dukkah
  • 75g cooked salmon

Method

  1. Put the diced avocado, lime juice, tomatoes and coriander into a bowl. Season with sea salt and freshly ground black pepper and stir to combine.
  2. Spread the cream cheese over two slices of Tip Top Thins. Sprinkle with the dukkah and spoon over avocado mixture.
  3. Top with flaked salmon and enjoy!

  • This looks like a nice light lunch option. I might have to finally try some salmon. If not, I could swap out the salmon for some tuna. Unfortunately I am also one of the unlucky ones that only tastes soap when eating coriander, so I will opt to skip that too.

  • Sounds like a delicious recipe, love the addition of avocado and cream cheese – an interesting combo that I’m keen to see if the kids like. This should be handy to help hit my protein goals as well as I’ve just started going back to the gym so any more fish in the diet is appreciated.

  • Oooo this is such a fantastic idea, I never think of open sandwiches. It might be a bit messy with the kids eating this but at least you get more yumm ingredients on top and you get to see them all. Plus always good for the gram stories when you share pics haha

  • I tried this recently when I had some friends over for a visit so the kids could have a play date and it was beautifully refreshing and super tasty. I would not have thought to put this mix of ingredients together but it works and it’s so quick and simple to put together

  • Yum, this looks delicious! I really like sandwich thins because they are so light, they do the job and you don’t need to fill up on bread to have a tasty sandwich. Salmon is one of my favourite fillings and this sandwich seems so easy to prepare. My mouth is already watering thinking about it!

  • The Open Salmon Sandwiches look delicious! All easy pantry and fridge ingredients, so no special shopping trips required. Perfect for when you need something a bit different but don’t have time to purchase one off ingredients. I would be cutting the Tip Top Thins into four portions, make it the perfect finger food sized appetiser for summer holiday get togethers!

  • I haven’t tried Tip Top Thins yet but I will give them a try especially with recipes using smoked salmon. This recipe looks yummy and healthy and doesn’t take all day to make. I would even have this for dinner when I don’t want to eat a huge heavy meal.

  • How delicious does this recipe look! I think it would make the perfect dish for our Christmas lunch with family and friends! It is not only healthy but easy to make and would be loved by all salmon fans out there! Even my toddler would love it-I might even get her to help me make them!


    • I really do like your idea of using these tasty Thins for Christmas lunch; I would happily use them with leftover Christmas meats. Thins are so light and not heavy and eating them is so good and does not feel heavy on the stomach; which is ideal for after Christmas. Day meals.

  • I really love the tip top Thins I love them fresh and toasted . They are a great for a light meal when you dont want to cook.
