This is an essential lunchbox filler in our house! You can use what ever fruit you have handy grapes, pineapple and pears work well too!


Ingredients (serves 6)

  • 1 Dragon fruit
  • 1 Kiwi fruit
  • 1 Tub of blueberries
  • 1 Packet of jelly crystals tropical flavours

Method

  1. Simply slice your fruit into bite size portions and divide between containers
  2. Make jelly according to instructions on packet
  3. Divide jelly mixture between cups, seal with lids and refrigerate!

Notes

You can make this healthier by using gelatin and stevia with fruit juice substituted for the cold water.

  • I’m guessing Dragon Fruit is the red one in your picture. I love the look of it and I want to find where I can buy it. Does it have another name?


    • Dragon fruit is a tropical cactus fruit, they do vary in colour and flavour but they are becoming more commercially popular so hopefully they will be available in coles and woolies soon!
