Delicious guilt free snack


Ingredients (serves 8)

  • 6 Bananas, mashed
  • 3 Eggs
  • 1 Cup Green banana flour
  • 1/4 cup Cocao powder
  • 1/4 Stevia
  • 3 tsp Baking powder
  • 1/4 cup Melted coconut oil
  • 1 Banana, sliced

Method

  1. Combine all ingredients except banana slices
  2. Pour Batter into a pre Lined loaf tin And top with banana slices.
  3. Bake at 180 degrees for 40 mins or until a knife comes out clean.
  4. Cool in tin for 5 minutes before removing, slice and enjoy

  • This looks great! Everyone loves a good banana bread! I’ve never actually baked with stevia before – I’m not too sure about that as some artificial sweeteners are worse than actually having sugar. I love that it includes cocoa too. That is a lot of bananas though, I have never seen a recipe that uses so many!

  • I have never heard of green banana flour. I am assuming it is just the greens banana box mix? Although the box mix already contains sugars

  • I don’t like the taste of stevia but hopefully it would be masked in this recipe? and Ive never heard of green banana flour? so I’ll have to try and find some. But I love banana bread and obviously the healthier the better.

    • Yes, woolworths sells green banana flour, you can find it in the health food isle. Alternatively you can find it in health food shops

  • How much Stevia? The recipe just says 1/4 Stevia, but 1/4 what? I’d assume it’s 1/4 cup, but as Stevia’s really sweet, I don’t want to add 1/4 cup if it’s meant to be 1/4 teaspoon or something else. Can somebody please clarify?


    • Yes I think stevia is very sweet as well and has a bit of a bitter after taste. I agree a 1/4 cup of stevia is a lot. Maybe just reduce it a bit and try it out ?
