A quick, easy and healthy version of Turkey Mince Tacos perfect for mid week dinners or lazy days! Let everyone make their own tacos including the kids using a heap of fresh veggies too – win win!
Ingredients (serves 4)
- 10 Taco Shells
- 500g Turkey Mince
- 1 Diced Onion
- 1 Diced Red pepper
- Bunch of spinach
- 1 Grated carrot
- Shredded cheese
- 1 Diced tomato
- 1 Chilli pepper (optional)
- 1 Natural Greek style yogurt
- Salsa sauce
- 1 Packet taco mince seasoning
- Olive oil
Method
- Cook the Onion in Olive oil until translucent. Add the mince and stir until cooked. Add the red pepper and stir for 1 min. Add the taco seasoning, mix for 1 min & then add a small cup of water. Mix everything well and stir letting it cook for 5 minutes. Set aside.
- Place tacos in the oven on a rack for 5 minutes at 150 so they are nice, warm and ready to be assembled!
- Place the mince mix, tacos and rest of the ingredients in bowls on the table and let people make their own tacos.
- If you like spicy food, slice a red chilli pepper and scatter over tacos.
