These CHIA PIKELETS from Jalna are the perfect breakfast or snack for everyone in the family.  Fluffy pikelets filled with Jalna Pot Set Yoghourt goodness and then topped with even more! Add a pile of fresh fruit and that’s a meal that’s healthy, pure and simply delicious!

We loved this recipe from Jalna so much, we whipped it up on video!

Ingredients

  • 1 cup self-raising flour
  • 1 tbsp chia seeds
  • 1 egg
  • 1/2 ripe banana, smashed into a puree
  • 3/4 cup milk
  • Jalna Greek Yoghourt to serve
  • fresh berries to serve

Method

  1. Mix chia seeds with 1 tablespoon of water and leave to rest until the chia forms a paste.
  2. In a separate bowl, beat the egg and milk until smooth then add the banana puree and chia paste. Add the flour and stir until just combined. Allow batter to rest at least 10 minutes.
  3. Heat a non-stick pan over medium heat. Using a large tablespoon, dollop batter into the pan, making sure the pikelets do not run into each other. Cook until bubbles begin to appear; using a spatula, flip and continue cooking until pikelets are golden and cooked through, about 4-5 minutes per side.
  4. Serve pikelets with yoghurt and fresh berries.

  • What an excellent, no extra sugar added, recipe! I’ll be trying this for my toddler. The last few recipes I’ve tried off baby sites have been absolute flops. It’s so annoying going to the effort to cook healthy snacks and they aren’t edible (even when weighing to the gram!) I hope these will be fab

  • Yoghurt with cakes is great, so will definitely give this a go as Jalna pot set yoghurt is delicious, and will add a creamy and tangy flavour. Love the banana and chia seed combo, and berries on top.

  • Nice to use banana flour &baking powder/-soda instead of self raising flour, making the taste even richer and the recipe more nutritious.

  • That actually sounds delicious and I like how you have used the Chia seeds. Yoghurt and fresh berries is a different but healthy alternative to cream and jam.

  • Given that there is only one egg in this, I’m quite sure I could use an egg replacer or other similar methods I have used in the past. These look like something I could make with my son for weekend brunch.

  • I’ve introduced my family to a dollop of yoghurt on pancakes instead of cream or icecream and we love it. Blueberries on top are my fave but love strawbs and raspberries too.
