A quick and easy fix for that leftover Christmas turkey!

Ingredients (serves 2)

  • 1 packet Chang’s Hokkien noodles
  • 200g leftover turkey meat, thinly sliced
  • 2 tbsp. vegetable oil
  • 1 clove garlic, crushed or sliced
  • ½ thumb ginger, peeled and grated or cut into matchsticks
  • 2 spring onions, white and pale green parts only, sliced
  • ½ medium red chilli, sliced – optional
  • 2 shitake mushrooms, sliced
  • 4 stalks asparagus, cut into 3-4cm lengths
  • 2 tbsp. Chang’s Oyster Sauce
  • 1 tbsp. Chang’s Light Oyster Sauce

Method

  1. Heat the oil in a wok, and add the garlic, ginger, spring onion, mushrooms and asparagus. Stir fry vegetable for 30 seconds, or until soft.
  2. Add the turkey meat, and stir fry for a further minute.
  3. Add the noodles, oyster and soy sauces, and cook for another minute.

  • Oh yes please. This is perfection. I love anything like this and could eat it night after night.

  • I love this recipe. However, our turkey was so loved on Christmas day there was none left. My mission in 2017 is to eat more turkey. Why do we have it only on Christmas Day. It was my fave meat of the day.

  • This is a fantastic recipe to use up my leftover turkey at Christmas time. Everyone usually has to take turkey sandwiches or turkey and salad every day until it’s all gone. This will make my family very happy.

  • I make a very similar stir fry to this once a week, but I add chicken instead of turkey. It’s very easy to make and a hit with the whole family.
