If you like coconut and lemon curd, this is the recipe for you!


Ingredients (makes 20 cookies)

  • 125 ml coconut oil, melted
  • 3/4 cup coconut sugar
  • 1 cup coconut flour
  • 1 1/3 cup desiccated coconut
  • 1 tsp vanilla essence
  • 3 eggs
  • 2 tsp baking powder
  • lemon curd

Method

  1. Preheat oven to 180 degrees.
  2. In a bowl mix the melted coconut oil and sugar together. Then add the eggs, one by one, and the vanilla essence. Incorporate the coconut flour, baking powder and desiccated coconut. Add extra coconut flour and desiccated coconut till you reach one mixture you can handle.
  3. Line a baking tray with baking paper. Make small balls with the mixture, put them on the tray and slightly flatten them. (I got around 20)
  4. Then, with the back of a spoon or your thumb, make a little hole in each cookie. Put a little teaspoon of lemon curd inside each hole.
  5. Bake for around 14 minutes.

    • No, I’ve never tried. But probably it’s not that difficult, is it? The important is to have good lemons. I just bought some lemon curd in one shop.

    * I put vanilla pods ( when i find them on special ) in with my sugar instead of vanilla essence :-)
