A quick and easy recipe that tastes amazing and the kids really enjoy it.

A low calorie meal but so tasty, I always serve this with spaghetti. We love to cook in our house hold and make foods that are preservative free, healthy and fun for the kids.

Mushroom And Sausage Ragu

Ingredients (serves 4)

  • 2tbsp olive oil
  • 1 carrot, grated
  • 3 spring onions, finely chopped
  • 2 garlic cloves, grated
  • 1 handful of mushrooms, finely chopped
  • 1 tsp dried oregano
  • 1 tsp fennel seeds
  • 6 sausages (I do beef), squeezed out of their skins
  • 400g canned chopped tomatoes
  • 1 tbsp ketchup or tomato sauce
  • 1 serve mash, couscous or pasta to serve

Method

  1. Heat the oil in a saucepan over a medium heat and tip in the carrot, spring onions, garlic, mushrooms, oregano and fennel, along with a pinch of salt. Cook for about 5 mins.
  2. Add the sausage meat and cook until browned all over, then add the chopped tomatoes and ketchup, along with a pinch of salt and 100ml water. Reduce the heat to low, cover and cook until the sauce is thick, about 20 minutes, stirring now and again. Season to taste, then serve with buttery mashed potato, pasta or couscous.

  • I love this dish, I have made it a couple of times and it is so good and also tastes just as good if not better the following day. I love mushrooms so this is my ideal dish to make. Especially in winter when you are wanting some yummy warm comfort food.

  • This looks so incredibly tasty! Thanks for sharing it! I’ve never eaten ragu before in my life and I’ve always wondered what it was! It looks super simple to make and I think my family will appreciate something new being added into the meal rotation!
I think I’ll try the pasta version first!

  • This looks fantastic and so simple! It’s quite similar to a spag bol recipe of my own creation. I can’t get enough of mushrooms, so always put in plenty. Sometimes I may also add baby spinach if I have it. You can also add a splash of red wine and a little chilli for extra flavour.

  • Personally I loath mushrooms, but my kids like them. I don’t really get the point of recipes that ask you to remove the sausages from their casing and just use the meat. Either use sausage mince (widely available) or just chop up the sausages. It’s a lot of extra fuss otherwise.

  • This sounds awesome. I figure it would be ok to use a pack of sausage meat rather then taking sausages from their skin??
This sounds like the perfect comfort meal for a cold Winters night. I have a wonderful man in my life that loves a good hearty meal each night

  • What a nice filling recipe! I have seen sausage been used this way in dishes online and on instagram or TikTok but have never attempted it myself. I would like to give this ago! I think with spaghetti it would taste amazing and would be a great dish to meal prep for budget-friendly work lunches too
