A quick and easy recipe that tastes amazing and the kids really enjoy it.

A low calorie meal but so tasty, I always serve this with spaghetti. We love to cook in our house hold and make foods that are preservative free, healthy and fun for the kids.

Mushroom And Sausage Ragu


Ingredients (serves 4)

  • 2tbsp olive oil
  • 1 carrot, grated
  • 3 spring onions, finely chopped
  • 2 garlic cloves, grated
  • 1 handful of mushrooms, finely chopped
  • 1 tsp dried oregano
  • 1 tsp fennel seeds
  • 6 sausages (I do beef), squeezed out of their skins
  • 400g canned chopped tomatoes
  • 1 tbsp ketchup or tomato sauce
  • 1 serve mash, couscous or pasta to serve

Method

  1. Heat the oil in a saucepan over a medium heat and tip in the carrot, spring onions, garlic, mushrooms, oregano and fennel, along with a pinch of salt. Cook for about 5 mins.
  2. Add the sausage meat and cook until browned all over, then add the chopped tomatoes and ketchup, along with a pinch of salt and 100ml water. Reduce the heat to low, cover and cook until the sauce is thick, about 20 minutes, stirring now and again. Season to taste, then serve with buttery mashed potato, pasta or couscous.

  • Haven’t tried squeezing out the sausages, must give it a go

    • Reminds me of The Big Bang Theory episode where Sheldon asks Penny to make spaghetti with little hot dogs cut up through it. I’d serve this maybe with the mad potatoes but with pasta? Sorry no, my Italian ancestors would be rolling around in their graves. Maybe with Continental sausages though? Only two out of three kids would eat it though.
