Great for when someone is sick and needed something nourishing for the heart and soul!


Ingredients (serves 2)

  • 200gm Frozen white fish
  • 200gm Frozen broccoli florets
  • 1/2 teaspoon ginger powder
  • 1 cup Cooked basmati rice
  • 2 cups Homemade vegetable stock or store bought stock
  • 1 teaspoon Soy sauce
  • To serve Pure sesame oil
  • 1 teaspoon basil pesto

Method

  1. In a medium pot, put in rice, vegetable stock, fish, broccoli and simmer for 1 hour.
  2. Add in ginger powder, pesto and soy sauce.
  3. Drizzle with sesame oil and serve.

Notes

This is my husband's favorite winter food but also perfect for when someone is unwell and needed something apart from chicken soup :)

  • I am honestly not sure about whether we’d like this one or not. Fish dishes can easily go either way… However, I do like how very easy it looks and it seems very nutritious. I’m well and truly willing to whip this up some night and try it on the family. Thanks.

  • I just love fish and this would be so full of flavour. And I’d like to try it with a dash of tabasco or chilli, and even a little garlic for extra oomph. Thank you for such an easy but tasty recipe.
