Easy + Nutritious Family Fav


Ingredients (makes 8 Sausage Rolls)

  • 500g Pork Mince
  • 1 Small Fennel Bulb
  • 1 Green Apple - Grated
  • 1 Large Carrot - Grated
  • 3 Cloves of Garlic
  • 20g Breadcrumbs
  • 1 tbs Olive Oil
  • 1 tsp Fennel Seeds
  • 1 tsp Thyme
  • 1 tsp Pepper
  • 1 tsp Salt
  • 1 Egg - Beaten
  • 1 Onion Chopped

Method

  1. In a large frying pan over a medium heat, add oil, garlic, onion, chilli and fresh fennel to the pan. Sweat it for 5 minutes, making sure you don’t burn the garlic. Add the grated carrot and apple, thyme and half the fennel seeds. Continue cooking this for a further 5 minutes, until the carrot and the apple have softened.
  2. Season the mix the salt and pepper, remove the mixture from the heat and leave it to cool. Once cooled, fold the base and the breadcrumbs through the pork mince, make sure not to overwork the mixture.
  3. Preheat your oven to 170 degrees.
  4. Make a 3cm sausage running the whole length of one edge of the puff pastry. Roll the pastry over itself until it meets the pastry on the other side of the sausage. Cut the pastry 2cm, past where it meets and roll over. Portion the sausage roll into 5cm pieces and transfer to a baking tray lined with baking paper.
  5. Brush with egg wash, then place in a preheated oven for 15 minutes. Sprinkle with the rest of the fennel seeds once out of the oven.

    • Pork and fennel rolls appear to be the flavour of the moment. I saw some for sale at the shops and the price was staggering! These looks even better at a fraction of the cost – thanks again for the recipe.
