Ingredients (serves 1 | makes 1 )

  • 1 - 2 sliced mushrooms
  • 1/2 small sliced tomato
  • 1 clove garlic (optional)
  • 50g - 100g cold shredded marinated roast chicken
  • 2 Tip Top Thins in Wholemeal
  • 40g feta cheese
  • a few basil leaves (to garnish)

Method

  1. Pan fry some mushrooms on medium heat (add crushed garlic clove or garlic butter - optional) for a couple of minutes.
  2. Once mushrooms are almost cooked, add your tomato and continue to fry for a another minute.
  3. Add roast chicken to the pan and toss through to warm the chicken.
  4. Place the pan fried ingredients on top of your Tip Top Thins, with fresh tomato, cheese and basil, top with your remaining Tip Top Thin and enjoy!

Notes

Extra filling ideas: lettuce, grilled sweet potato or baby spinach.

  • You had me at mushrooms. This is one of my favourite foods to eat and love the idea of adding it to a sandwich style dish. I bet this would be so tasty. I would swap out the feta for double Brie as I don’t think feta would go as nicely as Brie would.

  • This sounds great! We would definitely use it and vary according to each of our family member’s tastes. Hubby and my oldest daughter would love it as is. I’d remove the chicken from mine and add some spinach and maybe Parmesan cheese. Younger daughter would remove the tomato. And fussy one, aka my son, would just leave the cheese and remove everything else ????

  • I would leave the mushroom out. And I would also chop all of the ingredients up together until it almost resembles a spread and then toast it. We had a local cafe who made the most sublime chicken cheese and onion toasted multigrain sandwich and I’ve tried to recreate it with the Thins multigrain, and it works a treat.
