Slow Cookers are a great solution to having little time to cook. Ironically, they take so long to cook something that it saves you time! If you don’t have a slow cooker and you’re thinking that leaving something on the stove all day is a bad idea, you’re right. It is a bad idea. But slow cookers have been designed so you can safely leave them unattended for many hours. Slow cookers cook at a relatively low temperature, which make it amazing for those delectable winter dishes that should be cooked on low for a few hours. Classic pot roasts, pork shoulders, lamb shanks and this slow cooker chicken drumsticks all do well in slow cookers. Despite this, on the internet the slow cooker favourites all point towards soups!

Ingredients (serves 6)
- 1kg Chicken Drumsticks
- 3 tbsp Mexican Seasoning
- 400g Tin crushed tomatoes
- 1 large Brown Onion finely sliced
Method
- Place the chicken drumsticks into the base of your slow cooker - preferably just one layer of drumsticks.
- Sprinkle the mexican seasoning over the drumsticks followed by the onion.
- Pour the tin of tomatoes over the top of everything and stir/move slightly to get good coverage.
- Set your slow cooker on the LOW setting and cook for 6 - 8 hours.
Notes
Serve with pretty much anything ... corn cobs, green veges, an avocado salsa. In this version I've served with brown rice and some corn chips. A lovely dollop of sour cream would be nice too!
