These sugar and dairy free wholemeal blueberry pancakes are great for the sweet tooth but with no sugar!


Ingredients (serves 4 | makes 12 Pancakes)

  • 2 cups Wholemeal flour
  • 1 cup Rice milk
  • 1 Egg
  • 5 Tbsp Natvia
  • 1 cup Blueberries
  • 1 cup Raspberries
  • 3 Tbsp Honey
  • 3 Tbsp Sunflower oil
  • 1/2 cup Cottage cheese

Method

  1. Mix the dry ingredients in the bowl (flour and natvia) in a bowl until combined. Add the wet ingredients (rice milk and egg) and mix until all dry is mixed through.
  2. Add blueberries and mix until all through the mixture. Heat the fry pan with some sunflower oil on a medium heat.
  3. Pour 1/2 a ladle full in the frypan cooking 1 minute on each side or until golden brown and repeating with the remaining mixture.
  4. Serve warm with raspberries, honey and cottage cheese for a nutritious breakfast.

  • These sound really good. I prefer wholemeal flour as white flour pancakes can make me feel yuck in the morning. These would keep me going til lunch with the wholemeal flour and cottage cheese. I’d probably use oat milk as that is my fav at the moment. Thank you for the recipe, I look forward to trying it.
