A tasty quick and easy recipe packed with vegetables.
Ingredients (serves 1)
- 100gm Sliced tofu
- 1/2 small zuchinni
- 1/2 red capscium
- 1 bunch corriander
- 0.5 tsp chopped ginger
- 0.3cup cooked brown rice (left overs fine!)
- 1tbl oyster sauce
- 1 tbl sweet and sour sauce
Method
- Cut the tofu into cubes and stir fry with the chopped zucchini and capsicum until vegetables are cooked. Toss in the cooked rice.
- Add the chopped ginger and coriander (cut with scissors if easier) and heat gently for a few more minutes
- Reduce heat and add the oyster sauce and sweet and sour sauce. Stir into vegetables until heated through. Add water if sauces thicken too much.
Notes
Check the ingredients of the sauces to make sure this is gluten and lactose free.
