A tasty quick and easy recipe packed with vegetables.


Ingredients (serves 1)

  • 100gm Sliced tofu
  • 1/2 small zuchinni
  • 1/2 red capscium
  • 1 bunch corriander
  • 0.5 tsp chopped ginger
  • 0.3cup cooked brown rice (left overs fine!)
  • 1tbl oyster sauce
  • 1 tbl sweet and sour sauce

Method

  1. Cut the tofu into cubes and stir fry with the chopped zucchini and capsicum until vegetables are cooked. Toss in the cooked rice.
  2. Add the chopped ginger and coriander (cut with scissors if easier) and heat gently for a few more minutes
  3. Reduce heat and add the oyster sauce and sweet and sour sauce. Stir into vegetables until heated through. Add water if sauces thicken too much.

Notes

Check the ingredients of the sauces to make sure this is gluten and lactose free.

  • This dish looks like a great alternative to having a meat dish every night. It looks very simple to make and i am sure it tastes absolutely delicious. Marinating the tofu first is always a great idea, it will give it a little more flavour and kick to the dish. I will have to add this to my list to try.

  • Nice recipe ! As vegetarian Ipersonally wouldn’t use oyster sauce as it contains fish. I would probably replace that with Tamari (a fermented healthier soy sauce)

  • I’ve never really enjoyed tofu but I love stir fry vegetables so this might be good.


    • Tofu on itself is rather plain but with spices, marinade or friend together with onion garlic and other veggies it can be quite good !
