A quick and healthy dessert. Can be made a week in advance – just store in the freezer until you are ready to serve.


Ingredients (serves 2)

  • 1 cup Vanilla Yoghurt
  • 1/2 cup Light cream cheese
  • 1/2 cup Mixed berries (Strawberry, raspberry, blueberry, blackberries)
  • 1/4 cup Pomegranate seeds
  • 1/4 cup Medjool dates
  • 2tbsp Coconut oil melted
  • 1tbsp Pepitas
  • 1/4 cup Dedicated coconut
  • 1tsp Chia seed
  • 2tbsp Rolled oats

Method

  1. Combine the yoghurt, cream cheese till smooth... Remove 1/4 cup of this mixture and combine with 1tsp Berry puree (this will turn the mixture a gorgeous pink colour).
  2. Mash the dates and melted coconut oil till a thick paste achieved (you may need a tbsp of water) mixtogether with desiccated coconut, chia seeds, pepitas, rolled oats.- press into the base of a small tart tin. Scatter mixed berries over date/coconut base. Pour vanilla yoghurt Cheesecake mixture over berries. Dollop Berry yoghurt Cheesecake mixture over vanilla & swirl into a marble effect with skewer. Place in freezer fir 2 hours until firm. Remove from freezer & let sit 5minutes before slicing. Serve with scattered pomegranate & berries

    • The only disadvantage of this recipe is that you have to freeze it….I never have enough space in my rather small freezer !
