You can add any vegetables you want, it makes it easy to hide vegetables your fussy eater doesn’t like. If you add more just adjust the amounts of flour and spices.


Ingredients (serves 4 | makes 35 patties)

  • 2 zucchinis
  • 1 carrot
  • 1/2 cup sweet potato
  • 1/4 cup pumpkin
  • 2 large florets cauliflower
  • 1 1/2 cup plain flour
  • 1 1/2 tsp salt
  • 1/2 tsp tumeric
  • 1 tsp coriander powder
  • pinch cayenne pepper
  • 3 eggs

Method

  1. Grate all vegetables and place into a bowl.
  2. Add all spices, flour and eggs.
  3. Mix and place a good tablespoon size of mixture in a frying pan per pattie and cook until golden brown.

Notes

You could even use them as a party food and have toppings on them eg. Avo and fetta or any sauce to your liking (I like to use tomato chutney). You could even add a little more flour, roll and deep fry them.

  • These are so delicious! Thank you so much for sharing! I admit, the kids refused to eat them, but they are crazy fussy when it comes to new things, but that just meant more for us! 😀 I froze them, and found they reheated really quite well! Thanks again for sharing 🙂

  • I wonder if my fussy 10 year old would give it a go… he hates Zucchini… However it maybe hidden enough in this that he would not even realise it is Zucchini.

    • It’s a spelling mistake I didn’t see until I posted. They are suppose to be “Kofta patties”. It was my experiment on a Kofta ball recipe my family makes but I added more veggies and I flattened them because I have a very fussy kid and she eats with her eyes
