Just thought I would share that I had a bit of a brainwave this morning. lol. While dropping my daughter and son at school this morning I mentioned that I might make some cupcakes for them today so they can take them to school for morning tea this week. They were both excited and asked if I could please make “rainbow cupcakes”. I was thinking to myself “how can i make these healthier?” So I decided to add some pureed beetroot to the red part, pureed blueberries to the blue, fresh squeezed orange juice to the yellow and some wheatgrass juice to the green. They are yet to come home and try them but I have already dont so and Im pretty sure they wont notice the difference. i know it should still be treated as a “treat” but Im happy there is at least some nutrition in them. Heres hoping they love them.

  • How did they go? Did they taste good?


    • Yes, They LOVED them, and obviously had no idea what they were eating. YAY! My daughter is incredibly fussy and wouldn’t eat any of these things if she knew what she was eating. It still had butter icing so Im not trying to pass it off as “healthy” but anything to sneak those extras in.



      • Oh!! Glad they did. My girl too is just like that and won’t dare taste it if told. Loved the orange one, will try it.


      • Fantastic. You got away with it. There are recipes for beetroot chocolate cake…no one will ever know if you don’t tell them. You might want to try that.

  • I love this idea. I always do the same. I’m always thinking how can I make this healthier. My kids are a bit older and love guessing the mystery healthy ingredient. Its lots of fun and teaches them about healthy foods too. I hope your little ones love them.

  • would love the recipe so I can make them for my grand daughter. anything that is cupcake shaped gets eaten (just don’t call them carrot cakes and she will scoff them down!)
