Australia Day is the perfect time to feast on lamingtons and believe it or not they are easy to make!

Ingredients:

  • 1/3 cup cornflour
  • 1/3 cup plain flour
  • 1/3 cup self-raising flour
  • 4 eggs
  • 2/3 cup caster sugar
  • 2 cups icing sugar
  • 1 cup cocoa powder
  • 1/2 cup softened butter
  • 1 tbls hot water
  • 2 cups desiccated coconut

Method:

  1. Sift flours into a bowl – sift three times to make sponge airy.
  2. In a separate bowl beat eggs and sugar together for 6 minutes or until pale.
  3. Sift flour into egg mix a little bit at a time and use a spatula to combine carefully.
  4. Pour mixture into a pan.
  5. Cook cake into oven for 30 minutes at 180 degrees.
  6. Allow to cool.
  7. To make icing, combine icing sugar, butter, cocoa powder and water.
  8. Cut up cake into squares and dip into icing and roll in desiccated coconut.
  9. Place on a wire rack to set.
  10. EAT!

These are so delicious.

Although you can buy a sponge cake and just cut it up to make lamingtons, making your own tastes so much better.

  • The plain lamingtons are my favourite, not so keen on the ones with jam added to them. My favourite Australian dessert has got to be the basic trifle that my Nanna used to make.

  • Hubby loves lamingtons.
    Unfortunately I’m not the biggest fan as I don’t like sponge or coconut..
    Would be nice to try this recipe though to see how I go.

  • I love lamingtons however the ones you buy today aren’t the same. The icing is not chocolatey, I do not think they use cocoa powder nowadays in commercial bakeries.

  • My Nanna used to make the most light and airy lamingtons. I could never get them like hers. One day I might have to give them a go

  • In all of my 42 years I have never ever attempted lamingtons – maybe I will give this a try they do look great! It does seem like fairly easy recipe to follow also

  • looks fairly easy although as much as baking can be enjoyable, would probably end up with tough lamingtons so would prefer to buy them and enjoy with cuppa.

  • My mum and nan used to make the most amazing lamingtons – and I also made quite a few batches under the guidance. Nowadays I’m probably just not into cooking like I used to be – maybe I just don’t have the time.
