There’s no better ingredients to have in the pantry than a range of good quality olive oils.

So then no matter what recipe you’re whipping up, the flavours will sing and the tastes will be amazing.

Dressing – whether you’re whipping up a creamy Garlic Aioli like in this Roast Vegetable Salad with Garlic Aioli or mayonnaise or you’re making a zesty vinaigrette, the best base is a quality organic olive oil.

Roasting – this one may seem obvious but the right olive oil can take your roast vegetables to the next level when it comes to depth of flavour.

After all, with over 150 years of expertise the folks at Bertolli know a thing or two about perfectly balancing flavour with purpose. With the right olive oil, the recipe for getting roasts just right is simple!

When roasting vegetables, we recommend placing all the veges into a large bowl then adding olive oil, sea salt flakes, cracked pepper, crushed garlic and fresh herbs.  Toss everything together thoroughly until all the vege pieces are evenly coated. Then turn out onto a very hot baking tray lined with baking paper.  Pop them straight into a hot oven and rotate often until cooked through and caramelised on the outside.

Serve with an extra drizzle of olive oil as soon as the veges come out of the oven.

Toasting - there is nothing more simple than home-made croutons or toasted breadcrumbs. 

It’s a wonderful way to add an extra layer of texture to salads, vegetables or a super simple pasta dinner of spaghetti, fresh herbs, fresh chilli, loads of parmesan, a generous drizzle of organic olive oil and a handful of beautifully toasted sourdough crumbs.

Baking – did you know that olive oil is commonly used in baking?

You may be forgiven for thinking that baking is all about butter but it’s not. Whenever you’re thinking sweet baked treats, think olive oil. Muffins, fruit loaves, breads, focaccia and of course puddings all welcome olive oil to the party.

Frying – some people may try to tell you that you shouldn’t take olive oil to a temperature hot enough to fry.  We’re here to tell you to keep it simple! 

There’s no need to have separate oils in your pantry for the times you feel like a little something shallow fried.  Look for the lightest olive oil in terms of taste and use as you would any other oil.  You’ll find olive oil drains beautifully too – simply drop whatever you are frying onto absorbent towel for a moment or two before serving. The result is a beautiful light finish that’s a dream to eat.

When you are shopping for olive oil, it’s important to always look for quality olive oil.  Even better if you know the story behind the company that has grown and produced the oil as well as the processes they have used.  Actually when it comes to olive oil, the more pure it is, the better.
