Easy and tasty slow cooker meal
Ingredients (serves 6)
- 1 head cauliflower
- 1 cup frozen peas
- 2 cups chopped potatoes
- 400 gram can chickpeas
- 2 tbls curry powder
- 2 tbls tomato paste
- 2 tbls fresh chopped ginger
- 1 onion , chopped
- 2 garlic cloves, chopped
- 2 cups vegetable stock
- pinch salt and pepper
Method
- Place all of the ingredients except the salt and pepper into the slower cooker. Stir to combine. Cook on high for 4-6 hours, or on low for 6-8 hours, or until the vegetables are tender.
- Season to taste with salt and pepper. Serve with rice, preferably brown.
