Easy and tasty slow cooker meal


Ingredients (serves 6)

  • 1 head cauliflower
  • 1 cup frozen peas
  • 2 cups chopped potatoes
  • 400 gram can chickpeas
  • 2 tbls curry powder
  • 2 tbls tomato paste
  • 2 tbls fresh chopped ginger
  • 1 onion , chopped
  • 2 garlic cloves, chopped
  • 2 cups vegetable stock
  • pinch salt and pepper

Method

  1. Place all of the ingredients except the salt and pepper into the slower cooker. Stir to combine. Cook on high for 4-6 hours, or on low for 6-8 hours, or until the vegetables are tender.
  2. Season to taste with salt and pepper. Serve with rice, preferably brown.

  • This is a curry that’s quite new to me, and it sounds interesting. I’ve been looking for a way to use up some chickpeas I found in the back of the cupboard, and this seems like it might be just the recipe. Pretty healthy overall too, which is always a bonus.
