Ingredients (serves 1)
- 1/2 cup Sundried Tomatoes
- 8 Kalamata olives
- 8 green oilves
- 8 pepper stuffed green olives
- 100gm Goat's cheese feta
- 1/2 cup Olive oil
- 150gm Salmon fillet (Skin off)
- 2 teaspoon Olive oil
- 2 teaspoon Mix Italian herbs
- 2 teaspoon Freshly ground pepper
Method
- For antipasti, combine sundried tomatoes, all the olives and feta. Drizzle with generous amount of Olive oil. (This would yield about 4 serves worth of antipasti)
- For salmon, combined Olive oil, pepper and herbs in a bowl. Mix and spread on salmon. Grill on medium heat for 5 minutes on each side.
- Serve immediately with some lemon and extra sides :) For me, I am having half an avocado!
