Ingredients (serves 6 | makes 6 )

  • 12 Anzac biscuits
  • 1 tub Good-quality vanilla ice cream
  • 300g Melted chocolate, using a double boiler or microwave.

Method

  1. 1. Break up chocolate into smaller squares and add to a bowl. Set the bowl over a small saucepan of simmering water to melt your chocolate. 2. Take an Anzac biscuit, place it on a flat surface, and add 2 generous scoops of vanilla ice cream on top.
  2. 3. Add a second biscuit on top gently press together to form a sandwich. 4. Carefully dip half of the ice cream sandwich into the melted chocolate, allowing any excess to drip off.
  3. 5. Immediately roll the chocolate-dipped side in shredded coconut. 6. Place the sandwiches in the freezer for at least 3 hours to set. 7. Once frozen, take them out and enjoy your delectable Anzac ice-cream sandwiches! Makes 6

  • Oooo….I never thought of using Anzac biscuits for an ice-cream sandwich. I love the idea, but would have to find the right Anzac biscuits for the job. Chocolate dipped makes everything look more fancy, so I’m definitely adding this little trick to everything…maybe even add assorted sprinkles to jazz them up even more!? Thanks for the inspo

  • Oh my. My partner is addicted to Anzac Biscuits and asks me to make them all year round. In fact he asked me earlier in the week to make him up some and I plan to bake some up later this morning. Im even more keen to get started now.

  • Have never even considered or thought about using Anzac cookies for ice cream sandwiches, despite them being one of my favourite go to cookies when they are soft and chewy! I could imagine the texture working so well with ice cream. Definitely would give this one a go sometime for sure

  • That’s a bit of a different take on an ice cream sandwich. I don’t think it would appeal to me if it didn’t have the chocolate melted over it though. They sound quick and simple that the grand kids could even make them. Maybe we could do this on Anzac day.

  • How cute! I don’t know where people get these awesome ideas from!! I love ice cream biscuit sandwhiches! Anzac biscuits are the best aswell so what a delicious treat! Also for those with dietary issues you will be happy to know that you can get gf/df Anzac biscuits and ice cream and chocolate!! Woo hoo!

  • I love this idea – what a great idea to make Anzac biscuits even better. I love Anzac biscuits – so do all my kids – and this doesn’t sound too hard. It’s a bit different too. I like a simple but unique dessert idea, especially one that uses pretty simple things.

  • Oh wow – that picture makes these look meaty and mega!

    I recently made a batch of anzac biscuits – some plain and some with macadamia nuts. There is a few left in container – I think this would be the ideal way to use these up with leftover ice-cream.

    The melted choc and coconut makes this almost like a lamingon!

  • Lol, this sounds like an advert for the Vileda Handy Fresh® Multi-Purpose Nitrile Disposable Gloves !
    However the recipe is a nice idea and you could adjust all the ingredients to your liking ( like gluten free, diary free, lactose free, sugar free). The wait for three hours in the freezer may be hard for some 🙂

  • Oooh these look sooo good. While I love a good traditional Anzac biscuit especially on Anzac day I love how these sort of combine an Anzac biscuit with a lamington plus ice cream is always an added bonus. I might just have to give these a go for dessert! Thank you!

  • This is such a great serving suggestion for ANZAC biscuits. I had never actually thought of doing this. I usually eat them on their own. I reckon you could do a different flavour ice-cream too. I think caramel would work really well too. I always love a good bit of ice cream.

  • I am a huge fan of a yummy and sweet ice cream sandwiches because they simply taste so sweet and so delicious. Anzac biscuits are such incredibly good biscuits for making ice cream sandwiches for the family. They are also a good size for storing and for serving to the family.

  • This is a great idea to put a spin on the original Anzac cookie. Love it, I think the kids would absolutely love this idea. It is something you can get them involved in and make together. Anzac biscuits are so tasty but adding ice cream and chocolate as well. I feel like I am in heaven.
