This is a great recipe to increase the fibre in your snacks. With no added sugar you are down to the sultanas (and apples) for sweetness, making it a healthier option than many treats! It is also just as tasty and more filling than many sugary alternatives
Ingredients (makes 12 )
- 1 cup oat bran
- 1 cup self raising flour
- 1 tsp mixed spice
- 0.25 cup olive oil
- 0.5 cup water
- 2 eggs
- 1 cup grated apple
- 0.5 cup sultanas
Method
- Mix flour, oat bran and mixed spice in a bowl.
- whisk eggs and stir olive oil and water into the eggs
- Add wet mixture to the dry mixture and fold in the grated apple and sultanas
- Divide into muffin cases and bake for 20-25 minutes at 180C
