This is a great recipe to increase the fibre in your snacks. With no added sugar you are down to the sultanas (and apples) for sweetness, making it a healthier option than many treats! It is also just as tasty and more filling than many sugary alternatives


Ingredients (makes 12 )

  • 1 cup oat bran
  • 1 cup self raising flour
  • 1 tsp mixed spice
  • 0.25 cup olive oil
  • 0.5 cup water
  • 2 eggs
  • 1 cup grated apple
  • 0.5 cup sultanas

Method

  1. Mix flour, oat bran and mixed spice in a bowl.
  2. whisk eggs and stir olive oil and water into the eggs
  3. Add wet mixture to the dry mixture and fold in the grated apple and sultanas
  4. Divide into muffin cases and bake for 20-25 minutes at 180C

  • Using apples to bring sweetness is fantastic. I do the same with pancakes. No sugar, just grated apples.


    • Apples are good for sweetening salads too.
