Nice on a cold winter morning – they are quite substantial, so we cut one in half to feed 2


Ingredients (serves 2)

  • 4 Eggs -seperated
  • 2 Tablespoons Cream
  • 1 tablespoon Caster sugar
  • 1 tablespoon Butter
  • For the filling
  • 2 tablespoons Butter
  • 2 tablespoons Brown Sugar
  • 1 Apple, peeled cored and sliced
  • 3 tablespoons Cream

Method

  1. For the filling: Heat butter and sugar in frying pan and saute the apple slices until just tender Stir in the cream, and keep warm.
  2. Place the egg yolks in a bowl with cream and sugar, beat well. Whisk egg whites until stiff, then fold into egg yolks
  3. Melt butter in a heavey based frypan, pour in the egg mix and spread evenly. Cook until golden underneath, then place under a grill to brown the top
  4. Place omlette on a plate, pour appl mix over the top, and fold the omlette. Sift icing sugar over the top
