Ingredients (serves 2)
- 4 Eggs -seperated
- 2 Tablespoons Cream
- 1 tablespoon Caster sugar
- 1 tablespoon Butter
- For the filling
- 2 tablespoons Butter
- 2 tablespoons Brown Sugar
- 1 Apple, peeled cored and sliced
- 3 tablespoons Cream
Method
- For the filling: Heat butter and sugar in frying pan and saute the apple slices until just tender Stir in the cream, and keep warm.
- Place the egg yolks in a bowl with cream and sugar, beat well. Whisk egg whites until stiff, then fold into egg yolks
- Melt butter in a heavey based frypan, pour in the egg mix and spread evenly. Cook until golden underneath, then place under a grill to brown the top
- Place omlette on a plate, pour appl mix over the top, and fold the omlette. Sift icing sugar over the top
