Healthy biscuits for the lunchbox.


Ingredients (makes 40 )

  • 180 gms Butter
  • 230 gms Honey
  • 2 cups Self raising flour
  • 3 cups Cornflakes
  • 1 cup Dried apricot diced

Method

  1. Preheat oven to 170C. Melt butter and honey in a saucepan. Cool for a few minutes and then fold in remaining ingredients.
  2. Drop large teaspoons of the mixture on to a greased baking tray. Bake for 10-12 minutes.
  3. Allow to cool slightly before removing to biscuit rack.

  • I can’t tell if these are crunchy or not – either way, they look delicious!!!

  • The idea is nice but not the most healthy recipe. Cornflakes is such a sugar loaded refined product and heating honey strips it of all it’s nutrients and all what is left is a liquid candy made of refined glucose syrup instead of the beautiful pure and raw honey….
