Ingredients (serves 2)

  • 4 stalks asparagus cut to pieces
  • 1/4 cup cubes of cheese
  • 2 large eggs
  • 1/4 cup milk
  • salt and pepper
  • 1 tsp oil

Method

  1. Heat oil over low heat. Meanwhile, beat eggs with milk and salt and pepper.
  2. Pour egg mixture in pan and let the egg set. When set underneath, add the asparagus and cheese.
  3. Fold and flip. Serve hot with your choice of breakfast favourites.

  • Omelettes are the best aren’t they? I just add whatever left over veg I have in the fridge, but asparagus is always a beautiful treat!
