Mini delicious cheesecakes that require no baking


Ingredients (serves 10)

  • 250 gram Granita biscuits
  • 80 gram Butter
  • 250 gram Philadelphia cream cheese
  • 1 cup Caster sugar
  • 1/2 cup Cream
  • 1 punnet Strawberries or frozen equivalent
  • 1/2 lemon (juice)
  • sprigs Of mint

Method

  1. Crush the biscuits in a food processor until fine. Combine the melted butter and biscuits crumbs and press into 10 small martini glass and chill in the fridge.
  2. In a saucepan add the washed and hulled strawberries with half the sugar and cook on medium heat for 10 minutes. set aside to cool.
  3. Beat the Philadelphia cream cheese with the remaining caster sugar until smooth in consistency. Add the lemon juice and cream and beat for another 2 minutes.
  4. Evenly distribute the filling in the glasses. Refrigerate for 2 hours before serving. Decorate with the strawberry sauce and serve cold.

Notes

Can be made using different fruits for the sauce. Orange, raspberries, blueberries and passionfruit. Alternativelt you could crumble some chocolate on top.

  • Such a clever way to elevate a simple dessert! I love the addition of the fresh berries and the best thing about this is that they are all in lovely little individual serves that you can make look beautiful without the risk of it going splat when you go to cut it!

  • Love that the cream cheese has a lemon element to it. This is such a great recipe as too much cheesecake can be quite sickly so only a small amount is perfect.

  • I do something similar but make it without sugar. Instead of granita biscuits I use almond flour with a bit of raw vanilla bean powder for the crumble base. And for the cheesecake layer I often use just cream cheese and fresh fruits like mango, passion fruits, strawberries, blue berries or raspberries (when necessary with some chia seeds).
