This goes nice with poached pears, not too hard either!

Ingredients (serves 4)

  • 3 cups whole milk
  • 4 eggs
  • 1tsp vanilla essence
  • 1/2tsp cinnamon sugar
  • 2tsp caster sugar
  • 1 pinch nutmeg

Method

  1. Blend together the milk, eggs, vanilla, cinnamon & sugar
  2. transfer mixture into ramekins
  3. Place the oven-proof dish in a bain Marie (larger roasting pan filled with water coming about half way up the dish)
  4. Sprinkle with a nutmeg and Bake for 45 minutes or until a knife inserted in the custard comes out clean
