Ingredients (serves 4)

  • 600 gr Chicken breast
  • 1/2 Capsicum
  • 10 pcs Small onion
  • 5 pcs Garlic
  • 3 cm Galangal
  • 3 pcs Chili (remove seeds), roughly chopped
  • 4 Curry leaves
  • 2 tsp Honey
  • Pinch of salt

Method

  1. Put all ingredients into a food processor and blend till fine. (Do not add water)
  2. Marinate chicken with chili paste. Keep in the fridge overnight.
  3. Wrap the chicken with foil. Bake in preheated 200C oven for 30-35 mins.

  • Oooh yum. This looks tasty. Not sure my kids would eat it though :/

  • I know galangal is part of the ginger family, but I wonder if I could substitute normal root ginger in the recipe for the galangal? What do you think, MeiMei?
