Serve with salad and rice for lunch or dinner.
Ingredients (serves 4)
- 600 gr Chicken breast
- 1/2 Capsicum
- 10 pcs Small onion
- 5 pcs Garlic
- 3 cm Galangal
- 3 pcs Chili (remove seeds), roughly chopped
- 4 Curry leaves
- 2 tsp Honey
- Pinch of salt
Method
- Put all ingredients into a food processor and blend till fine. (Do not add water)
- Marinate chicken with chili paste. Keep in the fridge overnight.
- Wrap the chicken with foil. Bake in preheated 200C oven for 30-35 mins.
