This Balsamic Quinoa Salad is the perfect healthy dish for summer. It combines the nutty flavour of quinoa with fresh salad greens and veggies, all dressed in a tangy Paul Newman’s Own Balsamic dressing. It’s an ideal light meal or side dish for entertaining!

Ingredients

  • 2 beetroots, sliced
  • 2 carrots, diced
  • 1 red onion, thinly sliced
  • 2 tbsp Paul Newmans Own Balsamic Dressing
  • 4 cups mixed lettuce leaves
  • 1/2 cup raw quinoa
  • 1/2 cup diced feta
  • 1/2 cup chopped fresh parsley
  • 1 can butter beans, drained & rinsed
  • Additional 2 tbsp Paul Newmans Own Balsamic Dressing,
  • Salt & Pepper, to season

Method

  1. Preheat the oven to 180 degrees celsius.
  2. Cook the quinoa according to the packet instructions.
  3. Line a baking tray and add the prepared carrot, red onion, and beetroot.
  4. Drizzle with Paul Newmans Own Balsamic Dressing and stir to coat the vegetables evenly. Place in the oven for 12 minutes.
  5. Add the butter beans to the roasted vegetables and stir to combine. Cook for an additional 7 minutes.
  6. In a large bowl, combine the lettuce, quinoa, roasted veggies, feta, parsley and a generous drizzle of Paul Newmans Own Balsamic Dressing. Season with salt and pepper, and enjoy!

  • This salad looks amazing. I thought that was pumpkin in the picture but it must be the carrot. Quinoa is a great filling choice in salads. I love the flavour and the texture but I’d probably still have some grilled chicken on the side of this salad especially as a dinner.

  • What a lovely fresh looking salad idea that would be perfect for summer! I love salad recipes that include things like quinoa and beans and they still remain light and tasty but filling too! This would be great for entertaining as well as work lunches, I could see it getting tastier as the days get on too

  • This looks like a great option for Christmas gathering to have something in the healthy side, after loading on fat and carbs. The recipe sounds quite straightforward and could be also fun to make it with the kids. Will need to get my hands on Paul Newman’s balsamic secret sauce

  • This is a great new way to serve Quinoa and so colourful and nutritious looking. I’m always looking for new and exciting ways to serve Quinoa because its packed with goodness and this recipe will be perfect over summer for family gatherings because it will be so easy to prepare

  • This salad has some lovely ingredients ! I love the taste of roast beet root, roast onion and roast carrot or pumpkin and could eat only a bowl of that 🙂 Personally I am not a fan of tangy Paul Newman’s Own Balsamic dressing, or any other dressing. My husband and kids are no fans either

  • I really do love the look of this salad and would happily make and eat a bowl of this salad for lunch or dinner. This salad looks so fresh, colourful and tasty and looks so inviting in a bowl. This is a salad with some of my most favourite ingredients to eat.


    • I really do love the look of this salad and it would be an ideal salad to prepare and to serve at a BBQ. It would look terrific on a table full of other salads and also taste delicious when served with BBQ meat and a variety of different sides.

  • Yum, what an incredibly healthy and delicious looking salad. I have a big bag of quinoa and have been looking for summer inspiration for what to make with it. I’d love to add in some roasted butternut pumpkin cooking along with the carrot, onion and beetroot. We’re really looking at how we can add more legumes to our diet so I’m looking forward to trying this.


    • I agree, this salad looks so amazing and really healthy and good for you. I will definitely give this recipe a try however i would likely replace the butter beans for chick peas as I am not a fan of those. The recipe has lots of goodness in it and would be full of flavour.
