Lovely for afternoon tea. Fantastic for lunch boxes or an after school snack and a great way to get fruit and nuts into children.
Ingredients (serves 12)
- 1 3/4 cups Plain flour
- 2 teaspoons Baking powder
- 1/4 teaspoon Bicarbonate of soda
- 1/2 teaspoon Salt
- 3/4 cup White sugar
- 85 grams Butter softened
- 2 Eggs
- 1 cup Mashed banana
- 1/2 cup Chopped walnuts
Method
- Grease a 10x20cm loaf tin. Preheat oven to 180 degrees celcius.
- In a large bowl sift together flour, bicarbonate of soda, baking powder, salt & sugar. Add butter, eggs, mashed banana & walnuts. Beat until well blended.
- Pour battter into prepared tin & bake for about 1 hour or until a skewer inserted in the centre of the cake comes out clean.
Notes
For a healthier alternative replace white sugar with brown or raw.
