A basic cake ideal for birthdays or a special occasion.


Ingredients (makes 1 Cake)

  • 2 cups Self raising flour
  • 3/4 cup Sugar
  • 1 teaspoon Vanilla essence
  • 2 Eggs
  • 2/3 cup Milk
  • 1/2 cup White sugar
  • 1 Egg white
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Cream of Tartar
  • 1/4 cup Boiling water

Method

  1. Preheat oven to 180 degrees celcius.
  2. Place first 5 ingredients into a medium bowl & mix for approximately 2 minutes or until combined.
  3. Pour mixture into a greased cake tin & bake for 20 minutes or until cooked. Cool cake on a cake rack.
  4. Once the cake has cooled place the white sugar, egg white, vanilla extract, cream of tartar & boiling water in a bowl & beat using an electric mixer until stiff peaks form.

Notes

I chose a no cook icing option however, there are many to choose from. I bought the little flowers from a cake shop for the decoration.
