Beer Batter Pancake Cake - Real Recipes from Mums

A quick pancake recipe for lazy mornings.


Ingredients (serves 2)

  • 1 cup Self raising flour
  • 3/4 cup Leftover beer/ fizzy Sprite.
  • 1 tsp Vanilla essence

Method

  1. Combine the flour, beer or Sprite and vanilla essence.
  2. Heat a flat pan and spray with nonstick spray.
  3. Drop 2 tablespoonfuls of batter and quickly swirl batter around the pan. Flip when edges start to lift. Make at least 4 pancakes before layering up. Spread with peanut butter or Nutella or chopped up fresh fruits.

Notes

Works well with Wholemeal self raising flour too. Can use cold water as a liquid too, but makes heavier pancakes.
