The best recipe I have made for quiche. Always a hit!


Ingredients (serves 8 | makes 8 slices)

  • 2 Sheets Puff Pastry
  • 200g Bacon - Chopped
  • 1 Onion - Halved - Chopped
  • 1 cup Grated cheese
  • 4 Large eggs, beaten lightly
  • 150ml Thick cream
  • 150mls Milk

Method

  1. Grease pan and line with puff pustry, bake for 10mins covered with baking paper and pastry weights (or rice), remove once cooked and take off weights/paper, cook again 10mins. Remove.
  2. Combine all ingredients in a small bowl, mix and then add to pan. Cook for 20mins or until firm.

Notes

This recipe can also be adapted to add such things as tomato, capsicum, spring onion.. really whatever takes your fancy :)

  • This is a fabulous recipe, thank you Steph.W! I varied it slightly, as I had leftover free range ham I wanted to use up. I also made my own short crust pastry (just a little too short actually – as you can see in the photos it has broken in places). Such a simple recipe but so delicious. We have so many eggs from our lovely hens at present that I’m always looking for healthy recipes to use them up.
