This bolognese will be perfect with your favourite pasta or spaghetti
Ingredients (serves 4)
- 500g Premium mince
- 2tsp Olive oil
- 1 Brown onion
- 1tsp Mixed herbs
- 1tsp Ground oregano
- 1 Zucchini
- 6 Mushrooms
- 6 Garlic cloves
- 1 240g tin diced Roma tomatoes
- 2tbs Tomato paste
- 1 Red capsicum
- 150g Baby spinach leaves
- 1 Salt and pepper to season
- 1/4 cup Sherry
- 2tsp Brown sugar
Method
- Heat oil on a pan and fry diced onion, garlic and mince, throw in mushrooms and zucchini, season and add in herbs
- Stir in tinned tomatoes and tomato paste, dice capsicum and when bolognese is nearly cooked throw capsicum in. Add sherry and brown sugar, season with salt an pepper and reduce heat to a simmer.
- Fold through spinach just prior to serving
